Origin/meaning
The artichoke is a local variety, resistant to cold: the "big green of Laon" also called "cat's head" or "green of Italy". This last name emphasizes the tradition that the artichoke was introduced in the Laonnois and the Paris region by the very young Catherine de Médici who came to marry in 1533 the second son of François I, Duke Henri d'Orléans, future king of France Henry II (1547-1559).
Its cultivation lasted until the middle of the 20th century, its decline then begins against the mass production of Brittany and Italy. Today, only one producer remains in Chivy-les-Etouvelles where still an annual artichoke festival is held.
